I'm not really up-to-date on these kind of things, but I don't see Damon Knight mentioned all that much. He has an excellent book on writing short fiction, and I love some of his short fiction, particularly Four in One.

I just thought Riddley Walker by Russell Hoban maybe that fits.

SUCH a great book. Most of the action takes place over a single day, iirc - "It was the day after my naming..." can't find it to check!
