You can't separate the writing from the show, The show ending is the writing ending. GRRM and D&D have both confirmed this. Also every post above mine is discussing the show.

Jon and Dany dead, their Targ heir on throne, "kingdoms" still intact, different ruling houses for some. "The more things change, the more they stay the same" ending. But GRRM never actually finishes.
Put it away and move on to something more interesting. In a year go back and then see if there is anything there. You will probably find that there is.
