You might want to check out Y: The Last Man by Brian K. Vaughan[Wikipedia.org]. Post-Apocalyptic certainly though not the zombie or nuclear variety, this one's more horrific than either of those scenarios...:)
All great authors, though I would definitely go with Erikson and Bakker first (best two epic fantasy on your list IMHO). Bakker's Prince of Nothing series is phenomenal, if you have read and enjoyed Joe Abercrombie's First Law Trilogy then Bakker is definitely a must. I thought both series very...

The only Ennis I read up until now was Preacher and it near blew me away! I have almost all Hellblazer TPBs including all of Ennis' work. Looking forward to reading them when I'm done with Punisher.
